Here is one of of favorite breakfast treats. These muffins are so delicious. The cinnamon streusel topping adds the perfect touch! The muffins aren’t overly sweet, so the streusel really compliments them . They are actually quite easy to make too. I got this recipe 16 years ago from a friend when I was attending college.
Blueberry Streusel Muffins
- 1/3 c. sugar
- 1/4 c. butter, softened
- 1 egg, beaten
- 1 1/3 c. flour
- 4 t. baking powder
- 1/2 t. salt
- 1 c. milk
- 1 t. vanilla
- 1 1/2 c. fresh or frozen blueberries
Streusel Topping:
- 1/2 c. sugar
- 1/3 c. flour
- 1/2 t. cinnamon
- 1/4 c. butter
In a mixing bowl, cream sugar and butter. Add egg, mix well. Combine flour, baking powder, and salt: add to creamed mixture alternately with milk. Stir in vanilla, fold in blueberries. Fill 12 greased or paper lined muffin cups. In a small bowl, combine dry ingredients and cut in butter until crumbly. Sprinkle over muffins. Bake at 375 for 25-30 minute, or until browned. Makes 1 dozen muffins.
We made these as a special treat for General Conference this morning. I LOVE watching and listening to Conference. I look forward to it every 6 months – it gives me the encouragement and direction I need and helps me reevaluate my life and priorities. I am always amazed by the inspired messages from our leaders.
