FRUIT PIZZA
3/4 c. margarine or butter, softened
1 c. sugar
2 eggs
1 t. almond or vanilla extract
2 1/4 c. flour
1 t. baking powder
1/4 t. salt
1 c. shredded coconut
Cream butter and sugar, then add eggs and extract. Mix flour, baking powder, and salt, then add to the creamed mixture. Stir in coconut. Chill for 1 hour. Spray your hands with Pam cooking spray and press into a large cookie sheet or 2 medium pizza pans. Crust will very thin, but will puff up when baked. Prick a few times with a fork and bake at 375 degrees for 10 minutes. Cool - then spread on topping and garnish with fruit of your choice.
Topping:
8 oz. package of cream cheese
3/4 c. powdered sugar
8 oz. tub of Cool Whip
Blend cream cheese and sugar until smooth, then fold in Cool Whip. Spread evenly over crust. Top with kiwi, mandarin oranges, strawberries, blueberries, blackberries, pineapple, etc.
