Oreo Ice Cream Cake

Oreo Ice Cream Cake


33 Ice Cream Sandwiches (I just buy the 36 pack of Meadow Gold at Walmart) or 22 if you only want 2 layers
1 jar Hot Fudge Sauce (or 2 if you want an extra layer of fudge)
2 large tubs of Cool Whip
1 pkg Oreo's - crushed
1 large pkg. of Instant Chocolate Pudding
1 c. milk

Line a 9x13 dish with plastic wrap. In a large bowl, whisk the jar of Hot Fudge Sauce (slightly warmed so you can stir it) and 1 c. milk, stir in 2 cups of Cool Whip and the large pkg. of chocolate pudding. Unwrap the Ice Cream Sandwiches and line the bottom of the 9x13 dish with them, you can cut some of the bars to form an even layer. Spread half of the chocolate mixture evenly over the sandwiches. Sprinkle 1/3 of the crushed Oreo's and spread on a layer of Cool Whip. Repeat a layer of Ice Cream Sandwiches, Chocolate mixture, Oreo's, and Cool Whip. Add the final layer of Ice Cream Sandwiches, then freeze for a few hours. Remove from freezer and invert the cake upside down on a cookie sheet and remove the plastic wrap. Sometimes I add an extra layer of hot fudge sauce on top before I frost it - or spread hot fudge over the sandwiches before the chocolate mixture. Frost the cake with the remaining container of cool whip and sprinkle the remaining 1/3 of crushed Oreo's. Return to freezer. The longer this cake freezes - the more stable and solid it will be when you cut it. I like to make it the day before I serve it. :o)

Feel free to experiment with this basic recipe - you can use Mint Sandwiches and Mint Oreo's or Grasshopper Cookies. Also, try Neapolitan ice cream sandwiches or chocolate chip. You can even add different crushed candy bars to the layers or caramel. Sometimes I make this with just 2 layers of Ice Cream Sandwiches, fudge sauce, Oreo's, and Cool Whip.
